Shani'seasoning Famous Eggless Egg Salad

 

 

1 pack of medium/firm Tofu (350g)

** We like to mix half extra firm, half medium/firm to get that hardboiled egg like texture but either way work fantastic

DRAIN, SQUEEZE WATER.

IN A BOWL, CRUMBLE TOFU WITH A FORK/HANDS,

ADD:

2/3 CUP VEGAN MAYONNAISE 

1 TBSP YELLOW MUSTARD

1 TBSP DILL PICKLE BRINE/ LEMON JUICE

1 TBSP+ SHANISEASONING

1 RIB CELERY, FINELY DICED

2 SPRIGS GREEN ONION, FINELY SLICED

1/2 TSP CELERY SALT

MIX WELL, TRY, FIX SEASONINGS IF NEEDED (IF IT’S NOT 'EGGY' ENOUGH JUST ADD MORE SHANI’SEASONING! IF IT’S NOT FATT'Y' ENOUGH ADD MAYO! IF IT’S NOT ACIDIC ENOUGH ADD A LITTE LEMON!)

Shani'seasoning Eggless Fried Egg Sandwich (GF 'egg')

Ingredients:

 1/4 Cup Chickpea Flour

1/3 Cup + 2 tsp Water

2 tsp Shani'seasoning

1 tsp refined coconut oil for frying (or vegetable oil of choice)

 

 Method:

1. In a bowl combine all ingredients and whisk till smooth

2. Add coconut oil to pan on medium/high heat

3. Pour mixture into pan and wait till sides firm and flip like a pancake

(about 3 minutes each side)

 Serve on toast with avocado, red onion, tomato, micro greens and a splash of hot sauce
