Shani'seasoning Famous Eggless Egg Salad (GF)

 

 

1 pack of medium/firm Tofu (350g) OR 1 can of cooked chickpeas

DRAIN, SQUEEZE WATER.

In a bowl, crumble tofu with a fork/hands,

ADD:

1/4 cup vegan mayonnaise/ 1 ripe avocado

1 tbsp yellow mustard

1 tbsp dill pickle brine/ lemon juice

2 tsp shaniseasoning

1 rib celery, finely diced

1 sprigs green onion, finely sliced

**1/4 tsp celery salt optional

Mix well. Enjoy between 2 slices of fresh bread with Lettuce tomato and red onion or with your favourite crackers.

Shani'seasoning Eggless Fried Egg Sandwich

(GF 'egg')

Ingredients:

1/3 Cup Chickpea Flour

1/2 Cup Water

1 tsp Shani'seasoning

1 tsp refined coconut oil for frying (or vegetable oil of choice)

 

 Method:

1. In a bowl combine all ingredients and whisk till smooth

2. Add coconut oil to pan on medium/high heat

3. Pour mixture into pan and wait till sides firm and flip like a pancake

(about 3-5 minutes each side). GO SLOW AND STEADY- not high heat!

 Serve on toast with avocado, red onion, tomato, micro greens and a splash of hot sauce
